Lentil Burritos

Ingredients
1 Cup Green lentils (dry)1 Cup Brown Rice1 can (6oz) Tomato paste1 medium sweet onion, finely chopped1 packet Taco seasoning, OR:-2tsp garlic powder-2tsp onion powder-2tsp chili powder-2tsp ground cumin-2tsp salt (or to taste)-2tsp cayenne pepper (optional)hot sauce, to taste (optional)shredded cheese for garnish (to taste)your favorite corn or flour tortillas
Directions
Cook the rice according to package directions.
In a saucepan, bring 3 cups of water to a boil. Add the green lentils and cook for 20-30 minutes, until lentils are tender; drain and return to the pan.
Add the cooked rice, chopped onion, and tomato paste to the lentils, plus 2 cans of water (use the tomato paste can.)
Add the taco seasoning packet, or garlic powder, onion powder, chili powder, ground cumin, salt, and optional cayenne and hot sauce. Mix thoroughly and let simmer for 10-15 minutes so the flavors can develop. Adjust seasoning to taste.

Spoon into heated tortillas and garnish with cheese. Enjoy!
