Chicken Breasts with Glazed Peaches and Fennel

Ingredients
4 Boneless Skinless Chicken Breasts 1 tbsp Olive Oil1/2 C Red Onions, sliced 1 Fennel bulb, sliced1 can (15 oz) Del Monte No Sugar Added Sliced Peaches in water and splenda1 tbs. Rosemarysalt and pepper to taste
Directions
Yields 4 servings

Roast frozen chicken breast according to pkg directions (350 degrees for 25 minutes, flip and cook another 10-20).

Slice fennel and red onion. Add to heated pan with 1 T olive oil and cook until softened (5-10 minutes). Add peaches, chicken, and rosemary to skillet and bring to a simmer. Cook for 5-10 minutes until chicken is heated through and sauce thickens.

    This was a great recipe. It was easy and I was looking for something different to do with chicken. I also had fennel on hand. The savoriness of the rosemary and fennel mixed very well with the sweetness of the peaches. - 9/2/12
