Pumpkin Almond Waffles

Ingredients
1 15oz. can pureed pumpkin2.5 cups almond flour2 cups almond coconut milk1 cup shredded unsweetened coconut2 tablespoons maple syrup6 eggs, whisked0.75 teaspoon baking soda0.25teaspoon baking powder1.5 tablespoons vanilla extract1 teaspoon cinnamon1 teaspoon ground allspice0.5 teaspoon ginger0.75 teaspoon salt2 tablespoons honey
Directions
1. Whisk eggs.
2. Combine all dry ingredients except shredded coconut in a medium bowl.
3. Whisk all wet ingredients in a large bowl. Combine dry ingredient mixture and coconut to wet and whisk until incorporated. If dry add more almond milk. Consistency should be a little thick.
4. Heat waffle iron. When ready ladle in according to waffle-maker instructions.
