5 red, yellow or orange peppers1 lb browned ground beef1/2 chopped onion1 Tbsp taco seasonoing- heaping2 cups cooked brown rice1 can black beans16 oz salsa1/4 cup shredded cheddar cheese
Preheat oven to 450. Cut the peppers in half from top to bottom, clean out and rub with olive oil, bake on cookie sheet for 20 min. Brown hamburger and onion together, add taco seasoning then add salsa, beans & rice. Put mixture into peppers halves and bake for 20 min. remove from oven sprinkle with cheese and place bake in oven for 5 min.
