21/2 cups wheat berries11/2 cups spelt flour1/2 cup barley1/2 cup millet1/4 cup dry green lentils2Tb Great Northern beans, dry2Tb Kidney beans, dry2Tb Pinto beans, dry4 cups warm water1 cup honey1/2 cup olive oil2Tb yeast2 Tb salt
1. Measure the water, honey, olive oil, and yeast into a large bowl. Let sit for 3-5 minutes.
2. Stir all of the grains and beans together until well mixed(do not add spelt flour). Grind in a flour mill. Add fresh milled flour, spelt flour, and salt to the yeast mixture; stir until well blended, about 10 min. The dough will be like that of a batter bread. Pour dough into 3 greased 9x5 inch loaf pans.
3. Let rise in your oven for about 30-45 minutes, or until dough has reached the top of the pan.
4. Bake at 350 for 45-50 minutes, or until loaves are golden brown.
Makes 3 loaves. Cut loaves into 12 pieces.
