Low Fat Broccoli, Rice and Cheese Casserole

Ingredients
Cooking spray1 cup chopped celery1 cup chopped onions1 can 98% fat free cream of mushroom soup1 can 98% fat free cream of chicken soup10 oz. low fat american cheese or velveeta2 10 oz packages frozen broccoli, partially thawed1 1/2 cups instant ricep1/2 tsp pepper
Directions
1. Preheat oven to 350 degrees
2. Spray a 9 x 13 baking dish with cooking spray
3. Set aside
4. Spray a medium skillet with cooking spray
5. Saute celery and onion over medium heat until onion is clear
6. Transfer onion and celery to large mixing bowl
7. Add soups and cheese
8. Stir until well blended
9. Add remaining ingredients and pour into prepared pan
10. Bake uncovered 35-40 mins or until bubbly and golden brown.
