Dirtbob's Chicken Tortilla Soup

Ingredients
Onions, raw, .5 medium (2-1/2" dia) *McCormick Chili Powder, 4 tsp *Swanson Natural Goodness Chicken Broth, 1.25 cup *Christopher Ranch Garlic (Minced in Water), 3 tsp *(V) Peppers, Green Chili, chopped (Gr Value), 6 tbsp *Corn, Great Value Whole Kernel Golden, Frozen, 1 cup Chicken Breast (cooked), no skin, 2 breast, bone and skin removed Olive Oil, 2 tbsp Del Monte Diced Tomatoes, No Salt Added, 3.5 cup *Bush’s Black Bean, reduced sodium, 1.75 cup *Velveeta shreds pepper jack, .5 cup *Tostito's Roasted Garlic & Black Bean Tortilla Chips, 6 oz
Directions
Saute onion and garlic in 1tbsp olive oil. Add tomatoes, seasonings, black beans, chilis, corn, broth and simmer for 15 minutes. Cook cubed chicken in 1 tbsp olive oil until done then add to simmering mixture. Continue to simmer for 30 more minutes. Serve with 6 tortilla chips and a dash of pepper jack cheese.

    YUMMY!!! You can save some calories and sodium by omitting the tortilla chips and cheese, but this is so good and we will be making it again....trying to work out a bigger portion still by adding more vegetables. - 4/17/13
