Indian Spiced Lentils

Ingredients
3 tablespoons olive oil5 cloves garlic, minced4 teaspoons ground cumin2 teaspoons ground coriander2 teaspoons ground mustard (if we have it)1 teaspoon ground tumeric2 cups lentils3 cups water1 jalepeno pepper, minced2 tablespoons molasses2 teaspoons sea salt1 teaspoon pepper1 can drained shrimp (mini)1 cup chopped cilantro leaves1/2 cup to cup chopped parsley
Directions
Heat 3 tablespoons olive oil in medium saucepan. Add garlic, jalepeno pepper and saute 2 minutes. Add spices and saute 1 minute. Add lentils and stir to coat.

Add water. Bring to boil, cover and simmer until lentils are soft but chewy (about 40 minutes).
Stir in molasses, drained canned shrimp, salt and pepper. Taste to adjust seasoning.

Before serving, add cilantro and parsley and gently toss to combine. Serve warm or at room temperature.

Note: Mustard seeds may be ground with mortar and pestal to subsitute for ground mustard.
