Crustless Crab Quice

8 ounces imitation crabmeat , chopped 1 cup low-fat cheddar cheese , shredded 1 cup onions , chopped (optional)3/4 cup mushrooms, sliced1/2 cup cooked spinach1 roma tomato, sliced1 clove minced garlic4 large eggs 1 cup skim milk 1/2 teaspoon salt 1/2 teaspoon dry mustard 1/8 teaspoon pepper 1 dash paprikaAdobo (optional)
1. Preheat oven to 400 degrees (375 degrees for glass plate).
2. Spray a 9" pie plate (or round casserole) with non-stick spray.
3. Combine chopped crab, onion and cheese.
4. Press into pie plate or round casserole.
5. Top with mushrooms, spinach, & garlic.
6. Beat together remaining ingredients except paprika and pour over the crab.
7. Sprinkle with paprika.
8. Top with sliced roma tomoto
9. Bake 35 minutes or until quiche is cooked through.
I often play around with the veggies that I add but find that spinach, mushrooms, & tomatoes are my faves. This can be made ahead & baked the next day. I use Adobo (a Goya seasoning) instead of salt & pepper.
