Creamy Cauliflower Soup

440 gr cooking onion300 gr potato ( with skin)524 gr cauliflower106 gr celery1 tsp salt2 cups skim milk220 gr cauliflower - Finely chopped80 gram carrots - Finely choppedfresh ground pepper to taste
Put 4-5 cups water in a large pot. Roughly chop the onions, potato, cauliflower, and celery. Put inot pot add the salt, and boil till tender. I use a hand blender to puree the vegetable. Blend till a texture of your desire. Add milk, and finely chopped cauliflower and carrots. Simmer about 15 minutes.
makes approx 10 cups.
More or less water can be added, depending on how thick you like your soup.
1 serving =2 cups
You may want more salt ( I personally don't use much)
