Company stuffed chicken breast

4 chicken breasts2 - 3 tablespoons fresh basil2 cloves garlic1- 2 tablespoons olive oil2 ounces swiss cheese, matchstick cut or shredded.4 ounces white wine if desired.
Either slit a pocket into a slightly frozen chicken breast OR pound breast between 2 layers of plastic wrap to approximately 1/4 inch.
Sautee finely diced garlic in olive oil until lightly browned. Add basil, cook until wilted.
Stuff a teaspoon of basil garlic mix into breast. Follow iwth 1/2 ounce of swiss cheese. (If ponding breast, place topping on breast and rool). Secure with a toothpick.
Lightly brown in pan using remaining olive oil, about 2 mins. each side. Place in lightly greased baking pan. Add wine if desired. Cover and bake at 350 degrees for 20 minutes. Uncover last 5 min for browner color or brush with kitchen boquet.
Serving Size: Makes 4 servings, 4 ounce chicken breast.
