Lean Turkey Muffin Cups

Ingredients
1/2 Cup quinoa, dry1 package lean ground turkey4 cloves garlic, chopped,3 Cups chopped fresh broccoli12 egg whitesLemon pepper seasoning to taste
Directions
cook quinoa in water according to package directions, meanwhile, in a nonstick skillet cook garlic and broccoli until almost tender, add ground turkey and cook until turkey is no longer pink. Add turkey mixture and quinoa to a large mixing bowl add in egg whites and seasoning, mix well. Spray 2 muffin tins with coconut oil spray and fill each cup 3/4 full. Bake in a 375 oven 25 minutes or until toothpick inserted comes out clean and muffins are firm to the touch. Let col, store in airtight container in refrigerator.
