2 cups of small zucchini sliced lengthwise.2 cups of spaghetti sauce1 lb ground beef8 oz shredded mozzerella cheese4 large hard cooked eggs peeled and sliced2 cups cottage cheese.
This lasagna serves 8. Brown ground beef in a large skillet. Add your favorite Spaghetti sauce.
Spray a large baking dish with cooking spray. Layer three times the zucchini slices, meat mixture, cheeses and sliced eggs, ending with a layer of cheese. Bake at 350* for 30 minutes.

I did not make this with the egg and cottage cheese, I used no egg, but used ricotta cheese instead--they have whole milk, low fat or no fat ricotta cheese, so pick which one you like. It came out yummy. My hubby liked it, but my 2 year old said "ewww gross". HaHa! He had something different. - 7/16/09
