Braised Collards with Shrimp

Ingredients
15 oz can of Italian style petite diced tomatoes8 cups chopped collard greens4 tsp olive oil1 small onion, finely chopped4 cloves of garlic, minced12 large mushrooms, sliced12 oz cooked shrimp, thawed 2 tbs reduced fat feta cheese
Directions
Drain liquid from tomatoes into a pot and add collard greens. Heat over medium heat, stirring occassionally, until liqud is gone, while you work through the rest of the recipe- about 5 min.

In a separate pan, heat olive oil over medium heat. Add onion, sautee 1-2 min. Add mushrooms, sautee 1-2 min, add garlic and sautee until most of the liquid from the mushrooms is gone. Stir in wilted collard greens and tomatoes, sautee 1-2 min. Add shrimp and cook until heated through. Divided into 4 servings and top each with 1-2 tsp feta cheese and salt and peper to taste.
