Boston Pork Butt

1 6-8 lb. Boston Pork Butt1 Tbs. of your favorite salt1 Tbs. Black Pepper1Tbs Olive Oil3 Tbs. Thai Chile Sauce
Preheat oven to 250 degrees.
Rub roast with Olive Oil
Mix salt and pepper and sprinkle over roast.
Spray heated frying pan with non-stick spray
Sear every side of roast. (sear, don't cook)
Make several 1 inch deep cuts across grain on top of roast.
Rub in Thai Chili Sauce or your favorite sauce making sure to coat inside cuts.
Cover with tin foil to keep from caramelizing the top until the last hour of cooking.
Cook for 7 hours before removing foil. Cook for 1 more hour. Meat should be 170 - 180 degrees in center when done.
Serving Size: Serves 10-16 depending on serving size. Based on an 8 lb. butt.
