Zucchini Pizza Sticks

Ingredients
1 Zucchini1 Roma tomato1/4 cup mozzarela or parmesan cheese1/4 tsp garlic powder1 Tbl olive oil
Directions
Slice the zucchini in half. Slice off the bottom to keep it stable.

Brush with olive oil and top with garlic or garlic powder.

Top with sliced tomatoes, salt and pepper to taste.

Use mozzarella cheese, Parmesan cheese or mixed blend.sprinkle with basil.

Bake 375 for 20 to 30 minutes until soft. (Depends on your oven.)

    This needs just a few more veggies with it. I added chopped mushrooms, onion and broccoli. Since I am dairy free, I topped it with vegen pepperjack cheese. - 9/22/16
