Cheesecake Factory Copycat: Sun Dried Tomato Fettuccine

3/4 lbs Fettuccine1 C pasta water3 tsp olive oil5 cloves garlic minced1/2 sund dried tomatoes sliced1 (14.5 oz can) petite diced tomatoes drained3 Tbs tomato paste1 Tbs- 4 Tbs sugar ( 1 first, then add to taste)1/2 C plain non-fat greek yogurt1/4 C light sour cream1 1/2 Cup baby spinachsalt/pepper to tasteparmesan cheese to taste
Make pasta
Mix sour cream and yogurt, set aside
Heat garlic and sun dried tomato over oil
2 minutes
Add diced tomato, tomato paste and sugar
Slowly mix in yogurt mixture and let thicken, add spinach until wilted.
Mine did not thicken, it needed thinning. I used almost the whole cup of pasta water to thin.
Serving Size: makes 4-6 servings
