Brad's Mint Chocolate Haystacks

Ingredients
2 Tb Margarine1/2C granulated sugar1C Almond Milk1/2 Tb cocoa4C quick oats1tsp vanilla1 pkg (270g) PC Semi-Sweet Chocolate chips - mint flavor
Directions
melt margarine, sugar, cocoa, milk until smooth (sugar is no longer coarse) add choc. chips and stir until smooth and runny. add vanilla, stir. add oats and stir until fully coated, quickly portion on to wax paper to cool.

Serving Size: makes 20 2inch cookies.
