Ingredients
3 extra large eggs2 small potatoes - chopped2 cups fresh Spinach1 cup Scallions - chopped1 tbsp Extra Virgin Olive Oil
Directions
Chop potatoes and scallions.
Heat oil and cook taters & scallions until taters are fork tender.
Whisk eggs together and add to taters & scallions.
Cover and set heat to low, cook for 10 minutes.
