Apple Pancake Slices

Ingredients
1 apple, peeled, cored and sliced into thin rings1 cup of all purpose flour1 tbsp of sugar1 tsp baking powder1/4 tsp of salt1 egg, beaten1 cup of milk (2%)2 tbsp of cooking oila dash of cinnamona dash of nutmeg
Directions
1. Wash, peel and core the apple. Slice into thin rings and place between 2 paper towels to dry.
2. Meanwhile, mix flour, sugar, baking powder and salt. Make a well in the middle of the dry mixture and set aside.
3. In another bowl, mix together egg, milk and cooking oil.Add liquid mixture to the dry mixture and stir until just moistened.
4. Sprinkle apples with cinnamon and nutmeg. Warm up griddle, and lightly spray with Pam.
5. Dip apple slices into pancake mixture until coated thoroughly. Cook on griddle on both sides until golden brown.

Serving Size: makes 36 dollar sized pancakes with apple inside
