Rustic Soup

Ingredients
1 chicken breast (no skin), cubed1 smoked sausage, sliced1 cup onion, chopped3 cloves garlic, minced1/2 cup carrots, chopped1 potato, peeled, cubed2 cans great northern beans3/4 cup water or chicken broth or winesalt and pepperabout 1 tbsp herb de provence
Directions
Heat onions and garlic in olive oil. Add chicken and brown. Add remaining ingredients and bring to boil. Reduce and simmer until potatos are cooked. I like to cook it for a while so that the potatos and beans begin to break down and the soup gets thick.

Makes about 5 1-cup servings.
