Yellow Curry Paste

Ingredients
1 shallot1 1/2 t. ginger root2 cloves garlic1/2 t. coriander, ground3/4 t. cumin, ground1/8 t. cinnamon, ground1 1/2 T. oyster sauce3/8 t. turmeric1/6 t. white peppercorns, ground1 T. packed brown sugar1/2 T. lime juice1/2 T. tomato ketchup2 - 2 1/2 T. coconut milk1 Thai chili pepper; or ground cayenne pepper to taste
Directions
Combine all ingredients in a food processor or blender and mix until smooth. Refrigerate in an airtight container.
