Bell Pepper and Egg White Scramble

Ingredients
1 Green Peppers sliced into rings1/2 cup Green Onions diced1 medium Red Tomatoes diced2 large Egg whites1/4 cup Reduced Fat Mild Cheddar Cheese *Optional 1 tsp Tony Chachere's Creole Seasoning *Optional Pam Spray or 1 tsp Crisco Vegetable to coat pan
Directions
1. Slice green peppers,
2. Dice onions and tomatoes
3. Add diced vegetables and cheese to egg whites and mix.
4. Add green peppers to a frying pan (coating the pan is optional).
5. Slowly add the mixture to the inside of each bell pepper ring.
6. Cook until the mixture begins to bubble. Flip and cook the other side.
7. Serve hot with whole wheat toast on the side.
