Portuguese Chicken Sandwich

10g Low fat mayonnaise1/2 tsp Sweet chilli sauce100g Chicken breast or tenderloin1/2 tsp Portuguese Chicken Seasoning (paprika, chilli, oregano, lemon)1 tsp Extra virgin olive oil1 squeeze Lemon juice2 slices Wholewheat bread3 slices Red tomato, medium10g Red onion1 cup Salad (.75 cup lettuce, .25 cup baby spinach)
Makes 1 Sandwich
Combine mayo and sweet chilli sauce in a bowl and set aside.
Flatten chicken with fist or mallet, place in a bowl with portuguese seasoning, oil and lemon juice.
Cook bread in toaster. Cook chicken 2-3 minutes per side on high heat.
Layer sandwich with chicken, mayo mix, tomato, onion and salad leaves. Delish!!
