Lemon Drop cookies

Ingredients
Cookie:Butter, salted, 1 cupEgg, fresh, whole, raw, 2 large *Flour, white, 3 cup Granulated Sugar, 1 cup Baking Soda, .5 tsp Salt, 1 tsp McCormick's Lemon extract, 1 tsp almond extract, 1 tsp Icing:Combine 2 c. powdered sugar with 4 TB butter, 2 Tsp. lemon extract and just enough water to create a paste.note: You will probably only use 1/2 of the icing....the recipe makes enough for 2 batches.
Directions
Using a handheld mixer, cream butter & sugar together. Add eggs, both extracts combining well. Then add dry ingredients a small amount at a time till all ingredients form a smooth cookie dough.

Now roll a 1" ball of cookie dough in your hands and place on an ungreased cookie sheet. Press your thumb lightly into the center of the cookie. Repeat until all cookie dough is gone.

Bake 10 minutes at 350 degrees. Remove sheet from oven and place cookies onto a mat to cool.

If using the icing, spread a touch of icing onto the top of the cookie while the cookie is still warm.
