1.25 c wheat bran1 c skim milk, soured with a bit of vinegar or lemon.5 c unsweetened applesauce1 egg1 T molasses.5 c AP Flour.5 c WW Flour1 t baking powder.5 t salt1 t baking sodaSoak the wheat bran in the milk for 10 mins to soften. Combine additional dry ingredients and set to the side. In mixing bowl combine applesauce, brown sugar, egg, and molasses. Mix well. Add wheat bran mix and mix in. Add dry ingredients and mix until just combined.
Preheat oven to 400 degrees. Line a muffin tin.
Soak the wheat bran in the milk for 10 mins to soften. Combine additional dry ingredients and set to the side. In mixing bowl combine applesauce, brown sugar, egg, and molasses. Mix well. Add wheat bran mix and mix in. Add dry ingredients and mix until just combined. Bake at 400F for 13 mins.
