Chickpea Peanut Butter Cookies

Ingredients
1 1/4 cups canned chickpeas, rinsed and patted dry2 tsp. vanilla1/2 cup natural peanut butter1/4 cup honey1 tsp. baking powderpinch of salt1/2 cup chocolate chips
Directions
Preheat oven to 350.
Combine all ingredients except chocolate chips in a food processor and process until smooth. Stir in chocolate chips.
With wet hands, form into 1.5" balls and place on parchment paper lined cookie sheet. Press cookies to flatten as they will not rise very much.
Bake approximately 10 - 15 minutes.
