Mix:2 cups white wheat flour1/2 cup unbleached all-prupose flour1 3/4 cups old fashioned or rolled oats1.5 tsp baking powder1.5 tsp salt1.5 tsp baking soda1/2 cup vegetable oil (I use canola)
In a large bowl mix all the dry ingredients until well blended. Add the oil and mix until evenly moist. Either use mix or place on pantry shelf for later use.
To mix pancakes:
1 cup homemade mix
1 cup buttermilk, nut milk, yogurt or 3/4 liquid whey
1 large egg
1-2 tsp vanilla
Serving Size: Makes about 5 cups of mix
