1 stick softened butter ( nutritionist says stay away from stick margarine but it can be substituted)1/2 c peanut butter1 1/2 c brown sugar 1 egg1 T vanilla extract1 t baking soda1 t salt1 Cup ground quick oats1c whole wheat flour1/4 c white four ( or same amount whole wheat or ground oats)Chocolate chips as desired. Recipe here uses two servings
preheat oven to 350 ( 25 degrees lower for a dark pan)
cream together softened butter and peanut butter.
Blend in brown sugar. add egg and vanilla and mix well. add ground oats, salt, and baking soda. Blend. Add flours. blend until smooth. Add chocolate chips, mix well.
Scoop by teaspoon full. Roll each cookie in hand until it forms a smooth ball. place 1 inch apart on cookie sheet. Press down with hand or bottom of glass. (these cookies don't spread out much) recipe makes between 24 and 48 cookies, depending on how big you make them. Nutrition info on her is based on 36 cookies. Bake for 10-15 min. the cookies should be set in the middle and firm on the outside. If over cooked, they will be a little crunchier.
