Crisp Asparagus Spears with a Flavourful Lemon Butter Sauce

Ingredients
* 1/2 lb. (before trimming) Fresh Asparagus Spears [This was sixteen 7 - 7 1/2" spears for me, but it will vary of course!] * 1 1/2 tbsp. Butter, salted [I only put 1 tbsp. in the tracker because there is EASILY 1/2 tbsp. butter left in the skillet --- so if 1 1/2 tbsp. sounds like a lot for two servings, don't worry --- lots of it drains off the finished asparagus!]* Juice from 1/2 of a Fresh Lemon* Fresh-ground Sea Salt and Black Pepper, to taste [NOT included in nutritional information!!!]* 1/4 cup Parmesan Cheese, grated / finely shredded
Directions
1. Trim the woody bottoms from the asparagus (About an inch or so... Bend and cut where it snaps off!) and cook in a large pot of salted boiling water for 2 minutes only.
2. Meanwhile, melt the butter over low-to-medium heat in a small skillet; add the lemon juice, then add salt and pepper to taste.
3. Drain the asparagus and place in the skillet with the lemon butter sauce. Let it sizzle a wee bit, and heat through, tossing to coat the asparagus spears well.
4. Plate the asparagus, and sprinkle 1/8 cup (2 tbsp.) of the Parmesan cheese on each serving. This recipe makes 2 servings, about 8 spears per serving (+/-). Serve at once. Enjoy! :)
