Honey-Dijon Pork Tenderloin

1 lb pork tenderloin2 tablespoons chopped fresh parsley2 tablespoons Dijon mustard1 tablespoon olive oil1 tablespoon honey1 clove garlic, minced1/2 teaspoon salt1/2 teaspoon pepper
Place pork in a shallow dish or zip-top plastic
bag. Combine parsley, mustard, olive oil,
honey, garlic, salt and pepper in a small bowl.
Spoon mustard mixture over pork; turn to coat.
Cover and refrigerate 2 hours or up to
overnight. Preheat grill to medium-high heat.
Grill pork, covered, 20 to 25 minutes, turning
once, or until thermometer reads 145 degrees.
Transfer to a cutting board, and cover with foil.
Let stand 3 minutes before slicing
