Sandwich Rolls

Ingredients
1 1/2 cups filtered water1 Tbsp. active dry yeast2 Tbsp. canola oil2 Tbsp. sugar or Splenda equivalent1 tsp. salt4 cups bread flour (or 1 cup whole wheat flour and 3 cups bread flour)1 Tbsp. vital wheat gluten
Directions
Place all ingredients in the pan of your bread machine in the order recommended by the manufacturer. Set for "Dough" cycle and press "Start."

Once the dough has risen, remove from the pan and turn onto a lightly floured surface.

Divide dough into 16 equal size pieces. Roll each into a round ball. Place on a lightly greased baking sheet, flattening slightly. Keep about 2 inches apart. Cut shallow "X" in the tops with a sharp knife, if desired.

Cover rolls with a damp towel and let rise until doubled in volume, about 40 minutes to 1 hour.

Preheat oven to 400 degrees F. Brush tops of rolls with an egg wash, if desired for a shine. Bake for 20 minutes or until golden brown. Makes 16 rolls.

    What a great, basic recipe! I am going to use this to make fresh sandwich buns at the beginning of the week (I hope!) And I can add cinnamon/raisin or diced spinach, or put seeds & oats on top for crunch and fiber! THANKS! - 2/19/11
