Soaked Whole Wheat Tortillas

Ingredients

3 cups whole wheat flour1 cup warm water1/2 cup plain kefir (or yogurt)1/4 cup coconut oil (melted)1/4 tsp baking soda1 tsp salt
The night before, combine the flour, water, kefir and coconut oil. Stir with a spoon to combine. Let sit, covered, at room temperature for 12-24 hours.
The next day, add in the baking soda and salt. Mix well. Cut the dough into 4 pieces, and each of those 4 pieces into 2-3 pieces, depending what size tortillas you want.
Preheat a cast iron skillet over medium high heat.
Roll out the tortillas to your desired size. Cook in the skillet for 30 seconds on each side. (They cook fast!)
Store in a covered container in the fridge. They keep 2-3 weeks.
