2 oz cream cheese - not lowfat2 oz cottage cheese - not lowfat1 cup steamed, mashed and strained cauliflower2 eggs1 medium tomato chopped1/3 yellow pepper chopped1/3 red pepper chopped1 vito's hot italian sausage cooked8 slices applegate uncured pepperoni1.5 cups pizza cheese
steam cauliflower, mash and then place in papertowel or cheesecloth and get as much water out as possible. Mix with 2 oz cream cheese and 2 oz cottage cheese, use hand blender to get smooth. Add eggs and beat. Put mixture in 6 x 9 or 9 x11 high sided dish. Cook for 20 minutes at 400. chop other ingredients. place other ingredients on top of "crust" and top with cheese. Cook 20 minutes or until cheese is bubbly and brown. Let cool for 5 minutes and cut.
