Oven Fried Shrimp

Ingredients
1/3 c flour1/4 beer1 egg white1/2 tsp salt1 c bread crumbs1 tsp cajun seasoning60 Med Shrimp peeled and deveined
Directions
Preheat oven to 450. Spray a rack large enough to hold shrimp in a single layer. Put rack on a baking sheet. In a bowl mix flour, egg white, half the salt and beer until smooth. In another bowl combine flour and the rest of salt. Dip shrimp in crumb mixture then in batter and back in crumb mixture. Lay shrimp on rack so they do not touch and bake for 10 to 12 minutes or until golden brown on outside and opaque in center. May serve with lemon wedges

    This is very good, I substituted panko crumbs for bread crumbs to give it that extra crunch! I like spicy, so added extra cajun seasoning also! Will definately make again - 8/16/09
