Ingredients
1 can tomatillo salsa / enchilada verde sauce2 oz tortilla chips (about 20)1 whole egg and 1 egg white, beaten together with whichever spices you prefer1/4 c black beans
Directions
pour salsa into a medium saucepan and heat over medium high. add tortilla chips and turn/stir until coated. cook until sauce is thickened and bubbly. add beaten egg mixture and stir until cooked. add black beans and cook until warmed through. serve with hot sauce and Greek yogurt or sour cream garnish.
