Cod Fish Cakes

Ingredients
5 red potatoes, skinned2 lbs. cod, cut into strips1 onion quartered6 cloves of garlic smashed2 Tbsp. butter3 Tbsp. Old Bay Seasoning2 Tbsp. ParsleyRed pepper flakes (to taste)Salt (to taste)Pepper (to taste)Panko bread cubs
Directions
1. Boil potatoes, cod, onion and garlic till done
2. Place in Kitchenaid mixing bowl with flat beater until combined.
3. Add butter and seasonings, continue to mix
4. Chill for at least an hour
5. Using an ice cream scoop, makes patties (2 scoops each) and pre-heat oven to 400
6. Pat Panko cumbs on both sides
7. Placed on cookie sheet sprayed with Pam
8. Spray tops of patties with Pam
9. Place in oven for 15 minutes
10. Flip and bake another 15 minutes
