Paleo, Gluten Free Maple Apple Cinnamon Muffins

Ingredients
2 cups almond meal (I used Trader Joes Almond Meal)1/4 teaspoon baking sodaPinch of salt1/2 teaspoon cinnamon4 packets truvia2 eggs4 tablespoons melted coconut oil (I used Nutiva)1 cup full fat coconut milk (I used Natural Forest)1/2 teaspoon maple extract1 medium apple (I used fuji)
Directions
Pre-heat oven to 350. Grease muffin pan or use paper/foil liners. I used a heart shaped muffin tin, so my muffins were just over 1/4 cup batter each.

Mix all ingredients into bowl. Pour into tin. Bake for 19-23 minutes. For even more amazingness, add a pat of grass fed butter on top. OMG. Seriously, you might eat the whole batch in one sitting, fyi.
