Ingredients
quinoa, parsley,scallion,red bell pepper, cucumber, olive oil, lemon juice
Directions
rinse quinoa till water runs clear. 1 cup dry quinoa to 2 cups water or follow package directions. cook till tender and liquid is absorbed.

wash and chop parsley, cucumber, scallion, bell pepper.
juice lemon and wisk with olive oil.

mix all ingredients together.
