Carly's Protein Quinoa Pilaf

Ingredients
15 oz lean ground (grass fed if you can) sirloin5 medium tomatoes chopped.5 large onion, chopped1 whole zucchini chopped1 whole yellow squash chopped3 tsp coconut oil salt, black pepper, garlic powder to taste
Directions
Cook onions, zucchini, squash in coconut oil until starts to brown. In a separate pan, brown beef, add tomatoes. once other veggies are soft and turning slightly brown, add meat mixture. Cook covered an additional 15 minutes. Makes 4 1 cup portions, can mix with half cup of quinoa per serving!
