Tuna Non-pasta bake (SCD, GF)

Ingredients
2 tins tuna drained (yielded 240g/8.5oz tuna)100g/4oz courgette (zucchini), peeled and sliced.100g/4oz mushrooms, finely chopped100g/4oz cheddar cheese, grated/shredded1 tbsp olive oilblack pepper
Directions
Preheat oven to Gas Mark 5 375F 190C.

Saute mushrooms in olive oil. Add to tuna with yoghurt and black pepper. Mix well.

Put half the mixture in a 2lb loaf tin, cover with a layer of courgette/zucchini slices and then a layer of cheese. Repeat.

Place tin in oven and cook for 30 mins.
