Spicy Chickpeas and Spinach Curry (Chana Palak)

2 tsp. Canola Oil1 medium onion, chopped6 cloves garlic, minced2 15 oz. cans chickpeas, drained1 Poblano pepper, diced1 TBSP Red Curry Paste3 TBSP Mild Yellow Curry3/4 tsp. cayenne pepper ( or to taste)1 15 oz. can petite diced tomatoes4 cups fresh spinach leaves6 oz. fat free plain Greek yogurt
Heat oil in large wok over medium-high heat. Add onions and stir fry until golden. Add garlic, chickpeas, poblano pepper, curry paste, curry powder, cayenne pepper, and mix well, heating through.
Add tomatoes and let simmer for 2-3 minutes until heated through.
Add spinach and stir until wilted.
Remove from heat and stir in yogurt to finish sauce.
Serve over rice or with Naan (not included in calorie count)
