Ingredients
1 15 oz can Blackeye Peas, drained and rinsed1 15 oz can Yellow Corn, drained1/4 cup red wine vinegar 1/2 cup fresh tomatoes, diced1 cup jicama, diced1/4 cup yellow onions, diced1 stalk green onion, sliced 1/2 cup red bell pepper, diced1/2 cup green bell pepper, diced1/4 cup fresh cilantro, minced1/4 cup fresh parsley, minced1 tsp garlic salt2 packets, Splenda or Stevia sweetener
Directions
Combine all ingredients. Refrigerate for several hours prior to serving.
