Chicken Tortilla Soup

Ingredients
12 cups chicken stock1 cup green pepper sliced1 cup red pepper sliced2 cups yellow peppers sliced2 boneless skinless chicken breast, cooked2 thighs, no skin and boned, cooked2 drumsticks, no skin and boned, cooked1 Tbsp. cumin2 cups frozen yellow corn2 cups black beans 5 chopped roma tomatoes2 cups chopped onion1 tsp ground red pepper (more or less, to your liking)
Directions
Chop cooked chicken, set aside. In a large pot, combine stock, vegetable and spices. Cook until soft. Add chicken. Simmer over low heat for 30 minutes to incorporate flavors. Serve with the following toppings:

low-fat sour cream
low-fat shredded cheese
chopped cilantro
crispy strips of fried tortillas
salsa
