Nutty Blueberry Banana Pancakes

1/2 cup oats- blend into homemade oat flour 1/3 cup of plain non-fat Greek yogurt (I used Fage Total 0%) 1/3 cup liquid egg whites 1/4 cup chopped/ smashed walnuts (optional) 1/2 banana1 tsp. baking powder 1 tbsp. ground flax 1 tsp. vanilla extract 1 cup blueberries Cinnamon to taste Coconut oil
Blend all ingredients together except for the blueberries and walnuts (set those aside.) Once blended, add the 1/2 cup of blueberries as well as the walnuts. Coat the pan with coconut oil (discretionary on how much, I used a regular tsp. and added when necessary.)
Cook pancakes on medium heat until golden brown on each side.
Topping: Take 1/2 cup of blueberries and put in microwave. Warm up the blueberries for 45 seconds. Drizzle on top of pancakes.
Optional: honey
