Ingredients
1/4 cup nonfat cottage cheese1/4 cup egg substitute1 tablespoon oat flour1 tablespoon brown rice flour1/8 cup splenda granular1/2 tsp. vanilla1/8 tsp. cinnamon
Directions
Combine all ingredients in blender, blend continuously until smooth and lump-free. Pour into three pancakes on a hot, nonstick griddle. Cook until set and flip. Serve with sugar free syrups and a puff of sugar free whipped topping. (not included in nutritional data) Three pancakes is one serving.

    This is not just a diet food! My children, and now grandchildren love this recipe. I add whole wheat pastry flour rather than the flours listed, and use whole eggs. I made several dozen, froze them, and my 2 year old granddaughter has made them her go-to snack! How cool is that? - 7/19/11

    These were SPECTACULAR! I didn't have very high expectations going in because they seemed so basic but they ended up being completely delicious, a family favorite. They didn't even need any syrup/whip cream on top--yummy enough by themselves!! :) Will DEFINITELY be making again. Thanks for posting! - 6/22/12

    Tasty, easy (I used a food processor). They came out a little like crepes. But, that just made it extra delicious with the blueberries and MANDATORY squirt of light whipped cream. :) - 7/31/11

    I've successfully used GF flour with this, it does change the texture a bit but not a problem. This recipe is great a pancakes, thinned as crepes, in a mini waffle iron...the only time I had trouble with it was in an aebelskiver pan. Just not enough 'body' for that use, I guess.
