Banana Muffins--Almond flour

Ingredients
3 cups almond meal/flour1/4 teaspoon salt1 1/2 teaspoon baking soda2 tablespoons coconut oil (melted)4 large eggs2 cups mashed bananaswalnuts are optional
Directions
Preheat oven to 350 degrees. Butter muffin trays.

In a large bowl, combine the almond meal, salt and baking soda. In a medium bowl, whisk together the eggs and melted, coconut oil. Stir the bananas into the batter, mix to incorporate then fold in walnuts if nuts are desired. Spoon the batter in to the muffin cups. Bake for at least 25 minutes, until the muffins are golden brown and spring back to the touch.
