Butternut squash soup

Ingredients
455g Butternut Squash200g Onion1500ml Homemade fat free veggie stockHerbs fresh or dried of your choice - sage works beautifullySalt and Pepper to season
Directions
Peel, deseed and chop butternut squash put into a pan, add chopped onion and cover with vegetable stock - if using dried herbs add now with salt and pepper to season (if using fresh herbs sprinkle on to the soup before serving) bring to a boil for a five minutes then simmer for another 15 minutes - allow to cool slightly before blending with hand blender - serve warm or cold as desired.

Serving Size: Makes 7 portions of 300ml servings.
