Zesty Lime Corn Salad

4 cups organic corn kernels1 cup (1 medium) diced red pepper/capsicum1 cup (1 large) finely diced vine ripened tomato1 cup (1 large) avocado diced1 cup (1 bunch) fresh chopped cilantro1 Tbsp (about 1) finely chopped serrano chilli or more to taste1 Tbsp (2-3 cloves) finely chopped fresh garlic2 Tbsp fresh lime juice1 Tbsp cold pressed extra virgin olive oil1 tsp Celtic sea salt or Himalayan saltfreshly cracked black pepper to taste
Soak the raw corn in some hot water for a few minutes and then drain.
Toss with the other ingredients, season to taste.
I like to serve mine on a bed of greens.
