Healthy Saute veggie wrap

Depending on whether you want an Asian, Mexican or other flair add whatever spices you want to the mixture just as it is done.Sliced veggies - eggplant, zucchini, mushrooms, onion, red bell peppers, garlic
Slice lengthwise the eggplant and zucchini. Slice or chop the other veggies.
Heat the broth (1-2 tablespoons) to start and add the eggplant sauté for 3 minutes and add the zucchini and broth if needed for another minute, add the green onion, mushroom and peppers, sauté for another 2-3 minutes until crisp. Add spices or other flavoring and heat through for a minute or so. All should be done in 7 minutes.
Spread hummus on tortilla (this recipe will make 2-3 wraps) - 1 tablespoon per tortilla, spoon in the veggie mixture, top with arugula and roll the tortilla.
Serving Size: 1 wrap (recipe makes 3 wraps)
